INGREDIENTS:
- 3/4 cup shortening
- 1/4 cup butter
- 2 cups granulated sugar
- 4 egg yolks
- 1 1/2 cups milk
- 1 teaspoon vanilla
- 1 teaspoon lemon extract ( I usually use all vanilla)
- 1 teaspoon baking soda
- 4 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1/2 teaspoon nutmeg
PREPARATION:
Cream shortening and butter with sugar. Add egg yolks, one at a time, beating well after each addition. Pour milk into a large measuring cup; add extract(s) and baking soda. Into a separate bowl sift flour, baking powder, salt, and nutmeg.
Add dry ingredients to the creamed mixture alternately with the milk mixture. Drop by teaspoonfuls onto ungreased baking sheets then sprinkle with a cinnamon-sugar mixture. Bake for 12 to 13 minutes at 375°.
Warning: this makes a bazillion cookies.

INGREDIENTS:
- 1 cup cake flour
- 1 cup all-purpose flour
- 2 teaspoons cream of tartar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 stick (4 ounces) cold unsalted butter, cut into 1/4-inch pieces
- 3/4 cup half and half
PREPARATION:
Roll the dough to about 3/4-inch thickness on a floured surface. Cut out biscuits with a 3-inch round cutter. Gather up dough scraps, reroll, and repeat the procedure until dough is used up. Place biscuits on an ungreased baking sheet.
Bake biscuits in center of a 400° oven until golden brown, 12 to 15 minutes. Serve biscuits hot, with butter.
Makes about 12 biscuits.
Notes: I found the dough particularly sticky, no doubt as a result of the amount of cake flour vs. regular flour. You may want to adjust the proportions.
I love Thai food, and this one is different than the typical Phad Thai
INGREDIENTS
- 1 tablespoon dark sesame oil
- 1 tablespoon vegetable oil
- 1 cup (1 small) chopped onion
- 1 teaspoon minced fresh ginger root
- 1 fresh red chile pepper, seeded and chopped
- 4 skinless, boneless chicken breast halves - cut into strips
- 1 1/2 tablespoons fresh lime juice
- 1 teaspoon dark soy sauce
- 1 tablespoon chopped fresh basil
- 1 tablespoon chopped fresh cilantro
- 1 (10 ounce) can coconut milk
- 1 tablespoon cornstarch
- 2 tablespoons water
- 1 (12 ounce) package dried rice noodles
- 1 tablespoon heavy cream
- 1 lime, cut into wedges
DIRECTIONS
- Heat the sesame oil and vegetable oil in a large wok over high heat. Fry the onion, ginger and chile pepper, stirring constantly until onion is tender. Add chicken strips, lime juice, soy sauce, basil and cilantro. Cook, stirring constantly until chicken pieces are golden and cooked through. Pour in the coconut milk, and bring to a boil. Stir together the cornstarch and water; stir into the sauce. Let simmer for 10 minutes, or until thickened.
- Meanwhile, soak noodles in hot water for 3 minutes. Bring a large pot of water to a boil. Add soaked noodles, and cook for 3 minutes, or until tender; drain.
- Serve the chicken mixture over noodles, and garnish with a twist of lime and a drizzle of cream.
Nothing like spending the day cooking and preparing my latest D&D adventure to help recover from a bad week. Here's the egg and macaroni salad I made today:
1 (10 oz.) pkg. frozen peas
1 med. tomato, chopped & seeded
3/4 c. salad dressing
1/2 c. celery slices
1/3 c. chopped green onion (use some green)
6 hard cooked eggs
Garnish with remaining egg.
Thanks too all my friends who rallied to my plaintive emails, etc. about my bad week. I'm pretty excited about Saturday, because I'll be running a longer-than-normal D&D session, which should definitely help my social needs.
All over the weather forecast it is "up to a foot of snow!" It isn't there yet, but the snow has been falling steadily all day. My daughter was sick (again) and so we mostly kicked around the house. I listened to The Bourne Betrayal on CD, baked cheddar biscuits, and finished construction on the second of my catwalks. I won't bother posting a picture yet; it looks just like the first one.
I also read the new issue of Fictional Reality, which featured a terribly clever Hirst Arts project. Unfortunately for me, it is pretty big. The idea was to create a multi-room dungeon in a single piece. Then he built a mountain "case" for the dungeon to drop into. I realized that one could create multiple dungeons to drop into the case. But like I said, at about 18" a side, you'd need almost 30 casts of the floor tile alone to make a dungeon with essentially one layout.
These will be thick.
INGREDIENTS:
- 2 cups all-purpose flour, stirred or sifted before measuring
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 egg, slightly beaten
- 1 1/2 cups milk
- 2 tablespoons melted butter
PREPARATION:
Sift
together flour, baking powder, and salt. In a separate bowl, combine
egg and milk; add to flour mixture, stirring only until smooth. Blend
in melted butter. Cook on a hot, greased griddle, using about 1/4 cup
of batter for each pancake.
Cook until brown on one side and around edge; turn and brown the other side.
Recipe for pancakes serves 4.
INGREDIENTS:
- 1 1/2 pounds red or Yukon gold potatoes, peeled, cut into wedges
- 1 tablespoon melted butter
- 1 tablespoon vegetable oil
- 2 teaspoons dried parsley flakes or 2 tablespoons fresh chopped parsley
- 1/2 teaspoon dried dillweed
- 1/2 teaspoon dried rosemary, crumbled
- 1/2 teaspoon onion powder, optional
- 1/4 teaspoon garlic powder, optional
- salt and pepper
PREPARATION:
Line a baking sheet with foil; grease the foil lightly. Heat oven to 375°.
Combine potatoes, butter, oil, parsley, dill, rosemary, and onion and garlic powders in a large food storage bag. Mix in the bag until potato wedges are thoroughly coated.

1 tbsp. baking powder
1/4 tsp. each ground cayenne pepper and salt
Note: I found that the batter needed a little extra milk in the kneading.

Ingredients
4 to 6 pork loins
1/4 to 1/3 c. vinegar
1/4 to 1/3 c. brown sugar, packed
Approximately 1 tbsp. vegetable oil

Ingredients:
2 eggs
2/3 cup milk
3 slices bread
1/2 cup chopped onion
4 oz. of shredded cheese
1 tsp. salt
1/4 tsp. black pepper
1 1/2 lean ground beef
Topping:
1/2 cup tomato sauce
1/2 cup brown sugar
1 tsp. mustard.
Beat eggs. Add milk and bread and let stand until bread absorbs liquid. Stir in onion and cheese. Add ground beef. Mix well. Shape into loaf.
Bake at 350 degrees for 45 minutes. Combine topping and spoon over meatloaf after about 30 minutes. Spoon topping over meatloaf every 10-15 minutes while meatloaf is cooking.
